Wild Garlic Pesto

I have been wanting to try wild garlic for a while and just missed out on last season so as soon as I saw it was available, of course I bought some! And it has not disappointed me. Swedish saying, the one who waits for something good never waits too long!


I made a wild garlic pesto with almonds and Västerbottens cheese, recipe below!


200 gr Wild Garlic

100 gr almonds, finely chopped

125 gr Västerbottens cheese

250 ml extra virgin olive oil

Zest & juice of half a lemon

Pinch of black pepper


Toast the almonds and let cool a little. Whilst they’re cooling blitz all ingredients apart from the cheese, so it becomes a paste. Add in the almonds and the cheese and blitz again until evenly mixed.


I store mine in glass jars and freeze the ones I am not using within the next couple of days!
