Weekend away!

Last weekend was spent in Norfolk celebrating dad in law’s 80th and 81st birthday! An area in England I’d never been to and it was super nice.

Saturday evenings dinner was a joint effort from me and sis in law! I did starter and dessert and sis in law did the main!

To start we had a Västerbottensostbakelse, a sort of a savoury cheese cake! Base is a dark rye bread and the cheese cake mix is of course, Västerbottens cheese, quark, Creme Fraiche, celery, apple, red onion, parsley, dill, cayenne pepper and set with gelatine! Main course was a leg of lamb marinated in a curry spice paste , ginger garlic, lemon, Greek yoghurt. Cooked in chicken stock and garnished with pomegranate, pistachio and mint.

Served with rice mixed with aubergine, tomatoes , green red chilli re onion parsley and garlic and as a side green veg with toasted flaked almonds.

Finished the dinner with a pineapple pie served with a brandy cream!
