These are so simple to make and is a great compliment to any dinner! In the picture below they were served with BBQ rump steak and a peach and Burrata salad.
Makes 12 which is about right for 4 people!
800 gr coarsely grated potatoes
250 gr Västerbottens cheese
2 garlic cloves, crushed
2 tsp salt
2 tsp coarse ground black pepper
Double Cream, approximately 200 ml.
Grate potatoes and cheese and mix well in a bowl with the garlic and seasoning.
Generously butter a muffin tin and put in the potato mix
Pour in double cream in to each tart but don't overfill. Cream should be just below the top of the tin
Bake in a 200 c oven for 40-45 minutes.
Let cool for a few minutes then gently loosen them from the tin with a knife.
