What is a Sunday without a roast? Just another day!
Today's roast is a chicken that's been cooked in my trusted Romertopf which was given to me by my mum and has been around since I was a child!
It is so easy to do and never dries out the chicken. In the clay pot, along with the chicken is a lemon, many garlic cloves, red chilli, red onion and the chicken has been rubbed with a jelly chicken stock and a Persian spice mix, Advieh.
Served with Yorkshire puddings, roast potatoes covered with paprika and cayenne pepper, fine green beans and a sauce rather than gravy.
The sauce is made from the juices, chilli, garlic and red onion left in the clay pot, blitzed in creme fraiche.
