Roast pork fillet with balsamic lentils

Tonights dinner is an oven roasted pork fillet served with balsamic lentils and air fried roast potatoes!

Super simple to make, only 613 calories, packing in a whole 55.8 grams of protein! Below recipe serves 2.

Roast Potatoes

  • 500 grams of potatoes, I used baby new potatoes

  • hot paprika powder

Peel potatoes and cut into half, soak in water for about 30 minutes then dry them with a tea towel. Once dried, coat them in paprika powder.

Into the air fryer for 30 minutes at 200 degrees C


Pork

  • 500 grams of pork fillet

  • salt and coarse ground black pepper

Trim off any excess fat from the pork. Season well and roast in a 200 degree C oven for about 20 minutes, until pork is ready.


Lentils

  • 1 tbsp olive oil

  • 1 onion

  • 1 carrot

  • 1 celery stick

  • 1 chilli

  • 1 clove of garlic

  • 1 lime, zest and juice

  • 1 little gem lettuce, ca 150 gram, sliced

  • 80 grams pomegranate seeds

  • 1 tbsp balsamic vinegar

  • 1 tin of green lentils, drained weight 235 grams

Fry chopped onion, carrot, celery and chilli and crushed garlic for a few minutes. Add in the zest and juice of a lime and let simmer for a couple of minutes. Add in the drained lentils and let simmer for a couple of minutes before adding in the little gem lettuce. Let the lettuce wilt and add the pomegranate seeds.


Time to plate up!
