I first had Orecchiette on a trip to Puglia back in 2008 when visiting with one of my friends. His aunt made them herself of course, she saw how much I loved them so when it was time to fly home she'd made me about 2 kilos to take home! It’s a fantastic pasta which is a bit firmer than other small pasta shapes.
Orecchiette alla Crudaiola is a simple tasty pasta salad consisting of Orecchiette, basil, olive oil, garlic, grated ricotta salata (which this time I had none so used aged parmesan) and fresh tomatoes.
