Here is one I prepared earlier in the week. A very simple, no fuss pasta dish.
I had some tomatoes and sweet pointed peppers that had to be used so put them all in a baking dish with, finely sliced red onion, dwarf basil, sliced garlic, feta cheese and a good amount of chilli oil!
500 gr of Valentina tomatoes (or any other small version like San Marzano, baby plum or cherry)
3 Sweet pointed peppers
2 red onions
6 cloves of garlic
400 gr feta cheese
1 pot of dwarf basil
75ml of chilli oil (can of course be replaced with just olive oil)
Bake in a 200C fan over for 30 minutes.
Also had some mini chicken fillets that needed to be cooked so put them on a baking tray with some olive oil, salt and pepper and baked in oven for 15 minutes.
Cooked linguine so it was done when both the veg and chicken were ready and once cooked, I kept aside a 100ml of pasta water that I put in a large bowl then put the pasta in and followed with the tomato/pepper/feta bake and cut the chicken in small pieces and mixed it all well.
Simple and very tasty!
