My day job has been bit hectic, the reason for not having posted anything for a while. That doesn’t mean though I haven’t cooked or baked.
I love risotto and I love making risotto. I am not traditional in always using parmesan, in fact I mostly don’t and use my favourite cheese, Västerbottens cheese.
In this post we have 2 different ones. Same base for both, onion, garlic, zest of lemon, red medium chilli, white wine, Arborio rice, chicken stock and Västerbottens cheese.
First one then has pan fried yellow chanterelles and funnel chanterelles all the way from Sweden, with thanks to my parents!
Second one, petit pots and king prawns. This version is one I often make!
